Rasp Zester and Fine Grater

$11.99

The holes on a box grater are too coarse for lemon peel; they dig into the white pith and it tastes bitter. A rasp shaves only the oily outer layer, which is where the flavor is.

  • Fine rasp for zest and cheese
  • 1 in (2.5 cm) wide blade
  • Rubber grip handle
  • 12 in (30.5 cm) long
Kindral rasp zester in stainless steel with a black handle

How to use it

Zest without the pith

  1. 01

    Rest it on the board

Hold the handle and stand the tip on a board or over a bowl at an angle.

  2. 02

    Push, don't saw

Draw the lemon or cheese down the blade in one direction, turning the fruit as the yellow comes off.

  3. 03

    Tap it clean

Tap the blade on the bowl to free the zest, then brush the holes under running water.

Close up

Long blade, short handle

Kindral rasp zester in stainless steel with a black handle
  1. Tip

Rest it on the board or the rim of the bowl so the grater stays still while your other hand moves the lemon.

  2. Rasp blade

About 7.9 in (20 cm) of fine teeth, 1 in (2.5 cm) wide. They cut best on the push, away from the handle.

  3. Grip handle

4.1 in (10.3 cm) of rubber over plastic, ridged so it holds when your hands are wet from the lemon.

  4. Hanging hole

Hang it on a hook. There is no blade guard, so a hook is safer than a crowded drawer.

Which grater for which job?

You still want a box grater for cheddar and carrots. The rasp is for the small, strong things.

Questions

No. The blade is sharp and has no guard, so store it hanging from the hole in the handle or flat in a drawer away from your fingers.

Not well. Soft cheese clogs the fine holes. It is made for hard cheese such as Parmesan, and for citrus, chocolate, nutmeg and garlic.

You have gone through to the white pith. Turn the lemon after every two or three strokes so you only ever take the yellow, and stop when you see white.

A medium unwaxed lemon gives roughly a tablespoon of loosely packed zest. Scrub waxed fruit in warm water before you start.

Sunday roast helper

Zested a lemon over the roast potatoes, grated garlic into the gravy and finished with nutmeg on the cauliflower cheese. The one tool did all three jobs. Easy to hold, and the hole in the handle means it hangs up again afterwards. We cooked for eight people and nobody had to wait for a turn at the grater.

Perfect for lemon drizzle

Bake a lemon drizzle most weekends and used to use the small side of a box grater, which took half the pith with it and left a lot of zest stuck in the holes. This takes just the yellow off in a few strokes, and the zest is so fine it disappears into the sponge. Tap it on the bowl and it all drops off. Game changer for anyone who bakes with citrus.

Good but slow on cheese

Superb for zest, a bit slow for cheese.

Frosting flavor

Lemon zest in buttercream frosting adds real flavor and no bits. So fine it vanishes into the butter.

Replaced the box grater

Don't miss the box grater for zest at all. Much easier.

Grandma's lemon bars

My grandmother's lemon bar recipe calls for a lot of zest, and I used to spend ages with the small side of a box grater. This takes the yellow off in a few strokes and the bars taste brighter. Grandma approved, and she is hard to please. I tap the zest off into the bowl and brush the holes under running water afterwards, and the blade looks as good as new.

Great, keep it away from soft cheese

Perfect for lemons, nutmeg and Parmesan. Tried a softer cheese once and it clogged right up, so stick to the hard stuff and it's great.

Christmas baking favourite

Bought it in November for Christmas baking and it hasn't been put away since. Orange zest for the mince pies, nutmeg for the brandy butter, fine lemon for the drizzle cake. The zest comes off in soft little curls and you can see where you've been, so you stop before you reach the white. It hangs from a hook by the window with the other bits and pieces, no cover needed up there.

Nearly perfect

Fine zest, comfortable handle. Only wish the hanging hole were a little bigger for my hook, but a small thing.
