Passing a yolk between shell halves often splits it, and a speck of yolk is enough to stop whites whipping. This pink bulb lifts each yolk out of the bowl by suction instead.

How to use it
Break the eggs into a wide bowl so each yolk sits on its own in the white.
Squeeze the bulb, rest the nozzle lightly on top of a yolk and slowly let go.
Lift the yolk across to a second bowl and squeeze gently to set it down.

Soft enough to squeeze with one hand. When you let go it springs back into shape, and the vacuum it makes draws whatever sits under the tip up inside.
A PP tip with a 0.9 in (2.2 cm) opening. Because it is clear plastic, you can watch the yellow center slide in and stop squeezing at the right moment.

Not if you squeeze before the nozzle touches the egg and let go slowly. Squeezing while the tip is on the yolk is what pierces it.
Do one yolk at a time. The bulb is small, and a second yolk drawn in on top of the first tends to break both.
Fresh eggs sit up tall in the bowl and lift cleanly. Older eggs spread flatter and their centers are weaker, so squeeze less and release more slowly to avoid tearing the membrane.
A little white often comes along, which does no harm to custard, curd or pastry glaze. What matters for meringue is that nothing yellow gets into the whites, and the bulb keeps the two apart from the start.
Whites freeze well in a lidded tub for meringues, macarons or a pavlova later. The rich centers go into carbonara, custard, lemon curd, mayonnaise or a glaze for pastry.

Sample, not realLifts yolks cleanly. My only reservation is that a very runny egg white made it harder to land on the yolk, so I use fresher eggs which hold together better.

Sample, not realI make a pavlova every Christmas and one speck of yolk used to ruin the whites. With this the yolk comes up whole and the whites stay clean. Peaks came out stiff first time.

Sample, not realThe tip about doing one yolk at a time is right. I tried two and it was messy, so now I go yolk by yolk and nothing breaks. Gentle release is the secret.

Sample, not realMaking fresh pasta with lots of yolks and this does the lifting for me. Squeeze, rest, release, over to the second bowl. Clean whites left for meringues the next day.
