A smash burger starts as a loose ball of mince and ends up thin, with a dark crust across the whole face. The flat steel plate does the squashing in one firm push, on a griddle or a heavy frying pan.

How to use it
Get a griddle or heavy frying pan properly hot, then drop in a ball of mince with space around it.
Lay a square of baking paper on the mince, push the plate straight down for about ten seconds, then lift it away and let the crust form before you flip.
Press dough balls into rounds for flatbreads, or hold a steak flat against the pan so the whole surface browns.
Close up

A round steel bar across the top, long enough for a full hand. Lean your weight straight down through it.
Two arched legs lift the handle clear of the plate, so your knuckles stay above the hot pan.
Each end of the bar is screwed to a leg. Check the screws now and then and nip them up if the handle feels loose.
A square plate with rounded corners and a brushed finish. It spreads the push evenly, so the patty comes out the same thickness edge to edge.
Compared
A patty mould shapes thick burgers before they hit the pan. A smash burger is flattened on the heat, which is the job the press and a sturdy spatula share.

Raw mince clings to bare steel. A square of baking paper between the meat and the plate lets the press lift off cleanly and keeps the burger in one piece.
It is steel like the plate, so it warms up if the press sits on a hot pan. Press, lift it off and rest it on a board between burgers, and use an oven glove for a long batch.
Yes, if the pan is wide enough for the plate to sit flat and heavy enough to stay put while you lean on it. Cast iron and thick steel pans suit it. Bare steel can scratch a non stick coating, so keep it off those.
The supplier does not give the plate size. The press ships in a box 17 × 17 × 9 cm, so the square plate is a little under 17 cm along each side.
Roll mince into loose balls of 80 to 100 g. Heat a heavy pan until it starts to smoke, add a ball, cover it with baking paper and press hard with the plate. Season the top, cook until the edge browns and crisps, flip once, add cheese and serve.
