Espresso WDT Tool with Stand

$17.99

Grinders drop espresso grounds in clumps, and water finds the gaps between them. Stirring the dose with fine needles before you tamp breaks those clumps up, which is all the Weiss Distribution Technique, or WDT, asks.

How to use it

Stir, tap, tamp

  1. 01

    Grind into the basket

Grind your dose straight into the portafilter basket, ideally with a dosing ring on top to catch strays.

  2. 02

    Stir the grounds

Push the needles down to the bottom and stir in small circles, working out to the edge, for 10 to 15 seconds.

  3. 03

    Tap, tamp, park

Tap the portafilter once to settle the bed, tamp, then stand the tool back in its stand with the needles down.

  1. Rounded knob

Sits in your fingertips, so the needles can be turned in small circles without your wrist doing the work.

  2. Fine needles

Thin stainless steel wires, set in a ring. They part the grounds without packing them, which a spoon or a cocktail stick would.

  3. Cone stand

Open at the front, so the tool lifts out by its knob. The needle tips rest inside it, off the counter and away from fingers.

Compared

Needles, a spinning distributor or a tap?

Tapping the portafilter settles the grounds but leaves the clumps. A spinning distributor levels the top layer. Needles reach the bottom of the basket, which is where most clumps sit.

Questions

It breaks up the clumps a grinder leaves in espresso grounds and spreads them evenly across the basket. An even bed lets the water run through all of the coffee instead of rushing through the loosest spot.

Yes, because you stir from above, the needles go into any size of basket. A dosing ring on top of the basket stops grounds flicking over the edge while you stir.

Not always. If your shots run fast, spurt from one side of the basket or leave holes in the spent puck, clumpy grounds are a likely cause, and stirring them out is a cheap first fix before you change the grind or dose.

Yes. They are thin on purpose, so they slip through coffee without compacting it. Keep the tool in its stand with the needles inside, and straighten any that bend with your fingers rather than pliers.
