Handy tool
Handy and easy to wash. Not quite as fast as I imagined, but neater than using shells.

Passing a yolk between shell halves often splits it, and a speck of yolk is enough to stop whites whipping. This pink bulb lifts each yolk out of the bowl by suction instead.

How to use it
Break the eggs into a wide bowl so each yolk sits on its own in the white.
Squeeze the bulb, rest the nozzle lightly on top of a yolk and slowly let go.
Lift the yolk across to a second bowl and squeeze gently to set it down.
Close up

Soft enough to squeeze with one hand. When you let go it springs back into shape, and the vacuum it makes draws whatever sits under the tip up inside.
A PP tip with a 2.2 cm opening. Because it is clear plastic, you can watch the yellow centre slide in and stop squeezing at the right moment.
Compared
The bulb works on eggs already cracked into a bowl, so one burst egg never spoils the whites of the rest of the batch.
| Compared | This productSqueeze bulb | Shell halves | Slotted cup separator |
|---|---|---|---|
| Keeps the centre whole | Yes | Often breaks | Yes |
| Sharp shell edges involved | No | Yes | No |
| Works on eggs already in a bowl | Yes | No | No |
| One egg at a time | Yes | Yes | Yes |
Not if you squeeze before the nozzle touches the egg and let go slowly. Squeezing while the tip is on the yolk is what pierces it.
Do one yolk at a time. The bulb is small, and a second yolk drawn in on top of the first tends to break both.
Fresh eggs sit up tall in the bowl and lift cleanly. Older eggs spread flatter and their centres are weaker, so squeeze less and release more slowly to avoid tearing the membrane.
A little white often comes along, which does no harm to custard, curd or pastry glaze. What matters for meringue is that nothing yellow gets into the whites, and the bulb keeps the two apart from the start.
Whites freeze well in a lidded tub for meringues, macarons or a pavlova later. The rich centres go into carbonara, custard, lemon curd, mayonnaise or a glaze for pastry.

Tiramisu for eight meant a lot of yolks. Cracked everything into a wide bowl, squeezed, touched, let go, and moved each one across. Not a single broken yolk, and the whites went into meringues the next day.

Angel food cake needs a dozen whites with no trace of fat and this is the cleanest way I have found to do it. I crack the eggs into a wide bowl so each yolk sits alone, then lift them out one by one. Took about ten minutes for the lot.

Using egg whites in my morning smoothie and this makes it so easy. The yolks go in the pan for my breakfast.

Pie crust brushed with just yolk gives a lovely shine. This gives me the yolk in seconds.

Bought for a friend who bakes a lot. She texted a photo of her first meringues a few days later, all clean and white. She says she wishes she had one years ago.

White cake needs whites only, with no trace of yolk. This got every last bit out and the cake came out snowy.

The silicone bulb is soft and comfortable to squeeze, even for small hands. Nozzle is clear so you see the yolk go up. The whole thing is light enough that my arthritic hands cope with it fine.
