Danish Dough Whisk

$17.99

Wet bread dough wraps itself round a balloon whisk and drags on a spoon. The open steel coil on this whisk lets the dough pass through it, so the flour gets worked in rather than packed in.

Kindral Danish dough whisk in steel and wood, mixing shaggy dough in a glass bowl

How to use it

Mixing a shaggy dough

  1. 01

    Liquid first

Pour the water and starter or yeast into the bowl, then tip all the flour in on top.

  2. 02

    Stir in circles

Hold the handle upright and stir through the middle and round the sides until no dry flour is left.

  3. 03

    Knock it clean

Tap the head on the rim of the bowl, then rinse it under the tap before the dough dries.

Why the coil shape matters

Kindral Danish dough whisk in steel and wood, mixing shaggy dough in a glass bowl
  1. Wooden handle

Long enough to keep your knuckles out of the bowl. Hold it upright, the way you would a pen, for tight circles.

  2. Steel collar

A metal ferrule joins the wire to the wood, where the strain lands each time you drag the head through a heavy mix.

  3. Open coil

An outer ring with smaller loops inside. The mix moves through the gaps instead of balling up in the middle of the head.

Compared

Dough whisk, spoon or balloon whisk?

A spoon will get there with enough effort, and a balloon whisk is still the tool for cream. For the first mix of a bread dough, the coil saves your wrist and your washing up.

Questions

One. The supplier's title mentions a two pack, but its packing list and its 110 g weight are for a single whisk, so that is what we list and what each order contains.

Pancake and Yorkshire pudding batter, muffin mix and anything thick enough to clog a balloon whisk. It folds and breaks up lumps rather than beating air in, so leave cream and egg whites to an ordinary whisk.

Yes. Sourdough starts life as a wet, shaggy mass of flour, water and starter, which is the stage a coil whisk is shaped for. Once it turns stretchy, switch to wet hands for the stretch and folds.

The supplier lists the box it ships in, 35 × 10 × 8 cm, and a weight of 110 g, but not the whisk's own length, so we don't quote one. In the photos it sits comfortably in a standard mixing bowl.
