Bakers keep one of these within reach the whole time dough is out. It cuts, lifts, turns and tidies, and the ruler along the edge means rolls and buns come out the same size.
Size 20 cm

How to use it
Lay the edge against the dough, read the ruler and press straight down to cut even pieces.
Slide the blade under sticky dough to fold it or carry it to the tin.
Push flour and dried dough into a pile with the flat edge, then wipe the blade dry.
Close up

The top edge is rolled into a tube, so you press down with your whole palm instead of a thin metal edge.
Etched on the blade: cups, fluid ounces, tablespoons and millilitres, handy when a recipe is in American measures.
Centimetres along the cutting edge with inches above. Mark a log of dough before you cut it into pieces.
| Width | Weight | Good for |
|---|---|---|
| 20 cm | About 130 g | Most home baking, small worktops |
| 22 cm | About 140 g | A little more reach for pizza dough |
| 25 cm | About 160 g | Large batches, wide pastry sheets |
| 30 cm | About 190 g | Clearing a big worktop in few passes |
All four are 12 cm tall. Width is the length of the blade, end to end.
Compared
A flexible plastic scraper bends to empty a curved bowl. A steel one stays rigid, which is what you want for cutting and for clearing a flat surface.

20 cm suits most bread and pastry at home. Go to 25 or 30 cm if you work large batches of dough or want to clear a wide worktop in fewer passes.
It is a straight steel edge that cuts cleanly through dough, so keep fingers clear when you press down. Don't use it on nonstick surfaces, which bare steel can scratch.
Dividing bread dough, cutting butter into flour, lifting sticky dough to fold it, moving chopped vegetables from board to pan, and scraping flour and dried bits off the worktop.
Roll the dough into a log, lay the scraper against it and nick a mark at every few centimetres on the ruler, then press straight down at each mark. A kitchen scale makes a good final check.

Happy with it. Marked down because the 22 cm is a bit short for my large counter.

Rolled the potato dough into ropes and cut gnocchi with the edge, using the ruler to keep them about the same length. Then scooped the lot onto a floured tray without squashing any of them. It took a couple of tries to stop the dough sticking to the blade, but a dusting of flour sorted that. Dinner was ready in under an hour and the worktop was clean after.

Went with the 20 cm to save space. It's great for dividing dough, but clearing the counter after a big batch of bread takes a lot of passes. Should've picked the 25.

I only make no knead loaves in a pot, so I hardly ever need it. Cuts fine, but not a tool I reach for.

Not just for dough. I use it to scoop chopped onions and peppers off the board and into the pan. The 12 cm height holds a decent pile.

Cuts dough, scrapes the counter. Love it.

Brilliant on flat counters but the straight edge can't get into the corners of my board.

It has a bit of heft without being heavy. The rolled handle stays comfortable when I push through stiff dough for my weekly loaves.

Our bread class instructor told us to get a metal bench knife and she was right. Slides under the dough so cleanly, and dividing with the ruler is easy.
