Picking thyme leaves off one by one was the most tedious job in the kitchen. Now it's thread, pull, done. The smallest hole is perfect for it.

Picking thyme leaf by leaf takes longer than the cooking. Pull the sprig through the right hole in this herb stripper and the stalk slides out bare, leaves gathered on the other side.

How to use it
Pick the smallest hole the bare stem will pass through. Thyme suits the 3 mm end; kale and chard need the 12 to 15 mm holes.
Push the cut end of the stem through from the front, hold the steel and pull. The leaves gather on the near side.
Unclip the guard to use the sharpened edge on the stripped leaves, then clip it back on before it goes in the drawer.
Close up

The 3 to 5 mm holes take thin stalks of thyme, oregano and tarragon.
The 12 to 15 mm holes take the thick ribs of kale, cavolo nero and chard.
Clips over the sharpened edge. Slide it off to chop the stripped leaves on a board.
Compared
Running your fingers down a stalk works on soft thyme but snaps tough rosemary and leaves kale ribs ragged. The steel edge holds every leaf back evenly.

| Thick kale ribs | Yes | No | Yes |
| Leaves stay whole | Yes | No | Yes |
| Green fingers after | No | Yes | No |
Anything with leaves on a firm stem: thyme, rosemary, oregano, tarragon, kale, cavolo nero and chard. Soft herbs like basil are easier to pick by hand.
Yes, one side is ground to a cutting edge for chopping leaves. Keep the green guard clipped over it whenever the stripper is not in use.
Fold the leaf in half along the rib, push the cut end of the rib through a 12 or 15 mm hole and pull firmly. The leaf tears away from both sides in one strip.
Our supplier sells this steel version singly. It replaces the cheap plastic leaf shaped strippers, which flex on kale ribs and have no cutting edge.

Sample, not realKale crisps are my kids' favourite snack, which means stripping a lot of curly kale. With little hands helping it was always chaos. Now they each get a turn pulling the stalks through while I hold the stripper, guard clipped on. Leaves come off in big pieces, perfect for crisps. Rinses clean under the tap.

Sample, not realSunday lamb needs a lot of rosemary. Pull the sprigs through and the needles come off in a pile, then a quick chop with the edge.

Sample, not realMy kids help strip kale for dinner now, with the guard on. They think it's a game and I get the extra help.

Sample, not realFirst time I used it I pulled from the wrong side and the leaves went through with the stem. Read the directions, pushed the cut end in from the front, pulled toward me, and it worked perfectly. Kale, thyme and oregano all come off clean now. Taking a star off only because it wasn't as obvious as I expected.

Sample, not realPull the chard leaves off for the salad and save the stalks to fry separately. Neat way of doing two jobs.

Sample, not realPretty shape but there's nowhere comfortable to grip it when you pull a woody rosemary stem through. It twists in my hand and the stem snags. Went back to stripping by hand.

Sample, not realThe stripping works fine. My issue is the guard routine. Unclipping it to use the edge, then clipping it back on every single time, gets old fast, so I mostly skip the edge and use a knife. That leaves me with a pretty basic stripper, which is fine, I just expected to use both parts of it.
