How to use it

Three jobs, one blade

  1. 01

    Measure and divide

    Lay the edge against the dough, read the ruler and press straight down to cut even pieces.

  2. 02

    Lift and turn

    Slide the blade under sticky dough to fold it or carry it to the tin.

  3. 03

    Scrape the worktop clean

    Push flour and dried dough into a pile with the flat edge, then wipe the blade dry.

  1. Rolled handle

    The top edge is rolled into a tube, so you press down with your whole palm instead of a thin metal edge.

  2. Conversion table

    Etched on the blade: cups, fluid ounces, tablespoons and millilitres, handy when a recipe is in American measures.

  3. Ruler

    Centimetres along the cutting edge with inches above. Mark a log of dough before you cut it into pieces.

Questions

20 cm suits most bread and pastry at home. Go to 25 or 30 cm if you work large batches of dough or want to clear a wide worktop in fewer passes.

It is a straight steel edge that cuts cleanly through dough, so keep fingers clear when you press down. Don't use it on nonstick surfaces, which bare steel can scratch.

Dividing bread dough, cutting butter into flour, lifting sticky dough to fold it, moving chopped vegetables from board to pan, and scraping flour and dried bits off the worktop.

Roll the dough into a log, lay the scraper against it and nick a mark at every few centimetres on the ruler, then press straight down at each mark. A kitchen scale makes a good final check.

Proper bit of kit

Feels solid in the hand, the rolled handle is comfortable and the edge is nice and straight. Got the 25 cm to go with a big wooden board.

Didn't suit my board

I mostly roll on a wooden board with a groove around the edge, and the scraper catches in the groove. Better on a flat worktop, I'll stick with my old one for now.

Wasn't sure I needed one

Always thought a bench scraper was a fancy baker thing. Then I tried making bagels and the dough was so sticky it glued itself to my hands. Sliding the blade under it and folding it over kept my hands clean and the dough in one piece. Now I use it for every bread recipe and to clear the counter after. The 25 cm is big but I like it.

Took me a few bakes

Never used a metal one before and it took me a few bakes to get the angle right for lifting wet dough without it sticking. Now I wouldn't be without it.

Outdoor flatbreads

Got one for dad, then myself

Bought this for my dad, who has started making his own bread since he retired. Used it once while I was round there to divide a batch of rolls and ended up getting a second one for myself. The ruler in centimetres and inches is clearer than I expected and the edge goes straight through the dough without dragging. Dad has the 25 cm and I went for the 20 cm since my worktop is smaller.
