Triangle Onigiri Mould Set

R199.99

Shaping onigiri by hand takes practice and leaves rice glued to your palms. These two clear moulds press a tidy triangle on the first go, ready for a strip of nori and a place in the lunchbox.

How to use it

Pressed and wrapped in three steps

  1. 01

    Wet the mould

Dip the mould and its lid in cold water and shake off the drops, so warm rice slides out cleanly later.

  2. 02

    Fill and press

Half fill with warm cooked rice, add a teaspoon of filling, top up with rice and press the lid down firmly.

  3. 03

    Turn it out

Lift the lid, turn the mould over onto your palm or a sheet of nori and ease the rice ball out.

Close up

Four pieces, two sizes

Kindral triangle onigiri mould set in clear plastic: two moulds and two press lids
  1. Large mould

The bigger triangle, for a filling rice ball in an adult's lunch. Ribbed walls let you see the rice level through the plastic.

  2. Small mould

A smaller triangle for a child's lunchbox, a snack plate or a bento with several fillings.

  3. Press lid

Each mould has its own lid. It sits inside the walls and packs the rice down evenly when you press.

  4. Dimpled face

Rows of small raised ovals cover the face that meets the rice. Wet it before each press, the same as the mould.

Mould, bare hands or cling film?

Hand shaping is the traditional way and worth learning. The mould is for weekday lunches, when you want six the same size in a few minutes.

Questions

Japanese short grain or sushi rice, cooked and still warm, holds a triangle shape well. Long grain rice such as basmati is too dry and loose to keep its shape once it cools.

Shortly before eating if you like the seaweed crisp, or straight away if you prefer it soft. Until then, keep the rice ball wrapped in cling film so the outside does not dry.

Wet the mould and lid with cold water before every rice ball and dip the spoon too. Rubbing a pinch of salt onto damp hands before you lift the rice ball out helps as well.

Anything firm and not too wet: flaked salmon, tuna with a little mayonnaise, pickled plum, cooked chicken or seasoned egg. Keep it to about a teaspoon so the rice closes round it.
