Shaped dough slumps if it rises flat on a tray. This oval rattan basket holds it to a loaf shape through the final prove, then leaves rings of flour on the crust when you tip it out.

How to use it
Dust the inside with rice flour, or rice and wheat flour mixed, and rub it into the grooves between the coils.
Shape an oval loaf, lay it in seam side up, cover it and leave it to rise on the worktop or overnight in the fridge.
Tip the loaf onto baking paper, score the top and bake. Brush the basket out once it has dried.
Close up

Straight canes run across the base, so the underside of the loaf picks up lines as well as the sides.
Each ring of cane holds a line of flour. When the risen dough comes out, that pattern is pressed into the crust.
The top coil is the widest point, 25 by 15 cm, so a risen loaf drops out cleanly when you turn the basket over.
Compared
A floured cloth in a mixing bowl works for a round loaf. The basket gives an oval shape, a ringed crust and air around the dough, which helps the outside dry a little before it meets the oven.

No, it is the bare rattan basket, and the bare coils are what print the rings on the crust. For a smooth top instead, line it with a well floured linen cloth or a clean tea towel.
The supplier gives the size, 25 × 15 × 7.5 cm, rather than a dough weight. Shaped dough should come about two thirds of the way up the sides, which leaves it room to rise without spilling over the rim.
Use rice flour, which soaks up less water than wheat flour, and rub it well into the grooves. A new basket needs a heavier dusting for the first few bakes, until a layer of flour has built up in the coils.
Let it dry completely first. Flour and dough flake off far more readily once dry, so tap the basket out, brush along the coils and pick off any crust with a fingernail. Avoid soaking it.
No. It is only for the rise. Turn the dough out onto baking paper, a preheated stone or into a hot lidded pot, and bake it there while the basket dries on the side.
